Line baking sheet with parchment paper.
In small mixing size bow bowl, combine yogurt, honey and vanilla. Mix until combined.
Using a spoon or spatula, spread yogurt out in a thick layer on parchment paper. Make sure the yogurt is not too thin or it will crumble.
Add the strawberries, blueberries, chocolate chips and granola over the yogurt.
Place baking sheet in freezer for at least 3 hours, but overnight will give you the best results.
Once bark has set, peel away from parchment paper and break into pieces.
Note: Keep remaining bark in an airtight container in the freezer for up to one month.
