    • 1 (5.2 oz) package Boursin Garlic & Herb Cheese

    • 1 cup reserved pasta water (add more if needed for sauce)

    • 2 cups rotisserie chicken, shredded

    • 2 cups fresh spinach

    • ½ cup freshly grated Parmesan cheese

    • Salt and black pepper, to taste

Instructions

  • Cook bow tie pasta in salted water until al dente. Before draining, reserve 1 cup of pasta water.

  • Return the hot pasta to the skillet. Stir in Boursin cheese, adding reserved pasta water gradually until a creamy sauce forms.

  • Fold in shredded rotisserie chicken and spinach, stirring until the chicken is warmed through and spinach wilts.

  • Sprinkle in ½ cup Parmesan cheese and stir until melted into the sauce.

  • Season with black pepper and serve immediately.
