If you’re looking for the perfect lunch to keep on repeat this summer… this Caesar Tortellini Salad is it.

It’s creamy, fresh, a little fancy — but still so easy. I made it in under 20 minutes and ate it poolside straight out of the mixing bowl. No regrets.

Ingredients

    • 1 package (9–12 oz) cheese tortellini, cooked and cooled

    • 68 crispy chicken nuggets, chopped (you can also use grilled chicken)

    • 1 cup chopped romaine

    • 1 cup baby arugula

    • ½ cup Caesar dressing

    • ¼ cup shaved parmesan

    • Juice of ½ lemon

    • Cracked black pepper to taste

Homemade Caesar Dressing Ingredients: If you’d like to make homemade Caesar dressing, you’ll need:

    • ½ cup mayo 2 tbsp grated Parmesan

    • 1 tbsp lemon juice

    • 1 tsp Dijon mustard

    • 1 tsp Worcestershire sauce

    • 1 garlic clove, finely minced (or ½ tsp garlic powder)

    • Salt & cracked black pepper to taste

    • Optional: 1 tsp anchovy paste for a traditional kick

Instructions

    • Cook tortellini per package instructions. Rinse with cold water and drain.

    • Cook chicken nuggets and chop into bite-size pieces.

    • In a large bowl, toss tortellini with Caesar dressing, lemon juice, and black pepper.

    • Fold in romaine, arugula, parmesan, and tomatoes.

    • Add chicken and mix gently.

Homemade Caesar Dressing Directions: Using a whisk, combine all ingredients.
