Cowboy Caviar is fresh, zesty, and made for poolside snacking, BBQs, and everything in between! Grab the chips and let’s make this the dip of the season 🥑🌽🌶️

Ingredients

    • 1 can yellow corn

    • 1 can white corn

    • 2 cans black beans, drained and rinsed

    • 2 cans Rotel (drained slightly)

    • 1/2 red onion, finely diced

    • 4 green onions, sliced

    • 1 orange bell pepper, diced

    • 1/2 bunch fresh cilantro, chopped

    • 3/4 cup Italian dressing

    • 2 packets Sazón seasoning (like Goya with coriander & annatto)

    • Juice of 1 lime (optional but delish!)

Instructions

    • In a large bowl, mix yellow corn, white corn, black beans, Rotel, red onion, green onion, orange pepper, and cilantro.

    • Add the Italian dressing and sprinkle in the Sazón packet.

    • Toss everything until fully coated. Fold in lime juice if using.

    • Chill for at least 30 minutes before serving.

    • Serve with tortilla chips or use it to top grilled chicken, tacos, or salads!
