Ingredients

    • 1 lb spaghetti (reserve ½ cup pasta water)

    • ¼ cup olive oil

    • 3 garlic cloves, minced

    • 3 tbsp fresh parsley, plus more for serving

    • ¼ tsp red pepper flakes

    • 1 tbsp lemon zest

    • 3 tbsp lemon juice

    • ¼ tsp salt

    • ⅓ cup grated parmesan, plus more for serving

    • Black pepper

Instructions

    • Cook spaghetti in salted water until al dente. Carefully reserve ½ cup pasta water, then drain. (Tip: To get the pasta water safely, wear oven mitts and place a metal measuring cup in the water and set aside.)

    • In a large skillet, heat olive oil over medium. Add garlic, parsley, and red pepper flakes; sauté 1 min.

    • Add lemon zest, juice, salt, pasta water, and spaghetti. Toss to coat and heat through.

    • Turn off heat and stir in parmesan until melted. Serve with extra parsley, parmesan, and black pepper.
