  • 2 –3 tablespoons honey plus more for serving if desired

  • 1 teaspoon fresh thyme or rosemary optional, for garnish

Instructions

  • Preheat the oven to 375°F and lightly grease a small baking dish or oven-safe skillet.
  • Add the blueberries first by spreading them evenly across the bottom of the dish. This allows them to soften, release their juices, and create a slightly jammy base as they bake.
  • Place the brie on top of the blueberries, positioning it in the center so the juices can cook underneath and infuse flavor into the cheese.
  • Score the top of the brie lightly with a knife. This helps the brie melt more evenly and allows the honey to soak into the cheese after baking.
  • Drizzle with honey directly over the scored brie, letting it settle into the cuts and slightly run over the sides.
  • Bake the brie for 12–15 minutes, or until the center is soft, warm, and gooey but still holds its shape.
  • Remove from the oven and immediately drizzle with more honey (if desired) while warm so it slightly melts into the cheese.
