Cinnamon Roll Bites

These easy cinnamon roll bites are soft, buttery, and packed with everything we love about the gooey middle of a cinnamon roll. Made with refrigerated dough and baked in a rich brown sugar sauce, they’re the perfect shortcut breakfast or brunch recipe for weekends and holidays.

Ingredients

Cinnamon Roll Bites

  • 2 cans refrigerated cinnamon roll dough with icing
  • 3 tablespoons butter melted
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ½ cup heavy cream or kefir

Brown Sugar Butter Sauce

  • ½ cup brown sugar packed
  • ¼ cup butter melted
  • teaspoons ground cinnamon
  • 1 teaspoon vanilla extract

Glaze

  • 1 cup powdered sugar
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract
  • 2 –3 tablespoons milk or kefir

Instructions

  • Preheat oven to 350°F and grease a 9×13-inch baking dish.
  • Open the cinnamon roll cans and cut each roll into 4 equal pieces. Roll each piece into a ball.
  • In a large bowl, mix melted butter, granulated sugar, and cinnamon. Toss the dough balls until evenly coated.
  • Arrange the coated dough balls evenly in the prepared baking dish.
  • In a small bowl, whisk together brown sugar, melted butter, cinnamon, and vanilla. Pour evenly over the dough balls.
  • Slowly pour the heavy cream or kefir around the rolls, allowing it to pool in the bottom of the pan.
  • Cover the dish with foil and bake for 30 minutes.
  • Remove foil and bake an additional 10–15 minutes, until the tops are golden and the centers are cooked through.
  • Whisk together glaze ingredients until smooth. Drizzle over warm cinnamon roll bites before serving.

Pour the cream or kefir around the rolls, not directly on top, to keep the tops golden and the centers gooey.
Best served warm for maximum softness and flavor.
For the ultimate gooey center, let the cinnamon roll bites rest for 5 minutes after baking before adding the glaze.
