Ingredients
2tablespoonssalted butter
1tablespoonolive oil
1large sweet onionfinely chopped
4clovesgarlicfinely minced
1cupshredded or finely chopped carrots
1cupfinely chopped celery
1cupfrozen peas
½teaspoondried thyme
1cupuncooked orzo
2cupschicken broth
1cupcooked rotisserie chickenshredded or chopped
1cupmilk
½cupfreshly grated Parmigiano-Reggiano

Instructions
Sauté the onion. Heat the olive oil and butter in a large deep skillet or braiser over medium heat. Add the onion with a pinch of salt and cook for 4–5 minutes, until softened.
Cook the vegetables. Add the garlic, carrots, celery, peas, and thyme. Stir well and cook for another 3–4 minutes, until the garlic is fragrant and the vegetables begin to soften.
Add the orzo. Stir the uncooked orzo into the vegetables until everything is evenly combined.
Pour in the broth. Add the chicken broth and stir. Bring the mixture to a gentle simmer.
Cover and cook. Reduce the heat if necessary, cover the skillet, and cook for about 6 minutes. Stir once or twice to prevent the orzo from sticking.
Add the chicken and milk. Remove the lid and stir in the shredded chicken and milk.
Finish cooking the pasta. Cover again and cook for another 4–5 minutes, or until the orzo is al dente and most of the liquid has been absorbed.
Adjust the consistency. If the mixture still looks too loose, cook uncovered for 1–2 minutes, stirring frequently. Remember that it will continue to thicken as it rests.
Make it creamy. Remove the skillet from the heat. Stir in the Parmesan until melted and creamy.
Season and serve. Taste and season with salt and black pepper as needed. Let the orzo rest for 2–3 minutes before serving.

The orzo will continue to absorb the sauce as it sits. If it becomes thicker than you'd like, stir in a splash of warm chicken broth or milk until it reaches your preferred consistency.
