This Creamy Salmon Orzo Bake is an easy one-pan dinner made with tender salmon, Boursin cheese, cherry tomatoes, spinach, and orzo. The pasta cooks right in the baking dish for a creamy weeknight dinner with minimal prep and no separate sauce.

Ingredients
1 ½cupsuncooked orzo
3cupslow-sodium chicken broth
½teaspoonkosher saltdivided
¼teaspoonblack pepper
15.2-ounce package Boursin Garlic & Fine Herbs cheese
1poundbonelessskinless salmon fillets
2cupscherry tomatoes
2cupsbaby spinach
Fresh lemon juiceoptional
Freshly grated Parmesan cheeseoptional
Instructions
Preheat the oven to 425°F. Lightly coat a 9x13-inch baking dish with nonstick cooking spray.
Add the uncooked orzo and chicken broth to the baking dish. Season with half of the salt and the black pepper and stir until the orzo is evenly distributed.
Place the Boursin cheese in the center of the baking dish.
Season the salmon with the remaining salt and arrange it around the Boursin. Scatter the cherry tomatoes around the salmon.
Cover the baking dish tightly with aluminum foil and bake for 25 minutes.
Carefully remove the foil. Add the baby spinach and stir everything together, allowing the softened Boursin to melt into the broth and coat the orzo. Gently break the salmon into large flakes as you stir.
Return the baking dish to the oven uncovered for 5–10 minutes, or until the orzo is tender and the salmon is cooked through.
Remove from the oven and stir again. Allow the dish to rest for a few minutes so the sauce can thicken.
Finish with fresh lemon juice and freshly grated Parmesan cheese, if desired, and serve warm.
Notes
The orzo will continue absorbing liquid as it rests, so don't worry if the sauce looks slightly loose when you first remove it from the oven.If the finished orzo becomes too thick, stir in a splash of warm chicken broth until it reaches your desired consistency.
