Ingredients

  • 1/2 cup cashew butter creamy
  • 1 teaspoon vanilla extract
  • 1/3 cup Truvia Sweet Complete Brown Sweetener
  • 3/4 cup oat flour
  • 1/4 cup mini chocolate chips
  • 1 –2 tablespoons honey optional, for extra sweetness + softer texture
  • 1 –3 tablespoons milk optional, any kind — only if needed to help the dough come together

Instructions

  • In a medium bowl, mix together the cashew butter, vanilla extract, and Truvia brown sweetener until smooth and creamy.
  • Add the oat flour and stir until a thick cookie dough forms.
  • Fold in the mini chocolate chips.
  • If the dough feels too dry or crumbly, add milk 1 tablespoon at a time until it holds together. If you want it sweeter, mix in honey.
  • Scoop the dough (about 1 tablespoon each) and roll into balls.
  • Chill for 20 minutes for a firmer bite, then enjoy!

If your cashew butter is very runny, you may need a little extra oat flour so the dough rolls easily.
