Egg Roll in a Bowl

This easy Egg Roll in a Bowl is a healthy, low-carb one-pan dinner made with ground pork, tender cabbage, carrots, garlic, ginger, soy sauce, and hoisin for all the flavor of a classic egg roll — without the wrapper.

Ingredients

  • 1 lb ground pork or ground turkey, chicken, or beef
  • 1 small sweet onion diced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons hoisin sauce add 1 more tablespoon for a sweeter, richer sauce
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger or 1½ tablespoons fresh grated ginger
  • 1 16-oz bag coleslaw mix
  • ½ cup matchstick carrots
  • 2 green onions thinly sliced
  • Kosher salt and black pepper to taste

Optional Garnishes:

  • Sliced green onions chives, fresh cilantro, toasted sesame seeds, chopped peanuts, crunchy chow mein noodles, and/or fresh lime juice

Instructions

  • Heat a large skillet over medium-high heat. Add the ground meat and cook, stirring, until browned and no longer pink, about 5–7 minutes. Drain excess grease and return meat to the skillet.
  • Add the diced onion, sesame oil, and rice vinegar. Cook, stirring, until the onion is soft and fragrant, about 4–5 minutes.
  • Stir in the soy sauce, hoisin sauce, garlic, and ginger until well combined.
  • Add the coleslaw mix and carrots. Cook, stirring, for 5–7 minutes, until the cabbage is wilted but still slightly crisp.
  • Remove from heat and stir in the green onions. Season with salt and pepper to taste.
  • Serve warm with your favorite garnishes.

Notes

Ground pork gives the most authentic egg roll flavor, but chicken, turkey, or beef work great too.
For a low-carb or keto version, use a sugar-free hoisin sauce.
This recipe is perfect for meal prep and tastes even better the next day.
Serve over rice, cauliflower rice, or in lettuce cups for different variations.
