Funfetti Cookie Bars

Soft and chewy Funfetti Cookie Bars made with Funfetti cake mix, crushed Oreos, and colorful M&M's. This easy cake mix dessert comes together in minutes and is perfect for birthdays, holidays, bake sales, summer parties, and family gatherings.

Ingredients

  • 1 box 15.25 ounces Patriotic Funfetti Cake Mix (or any Funfetti cake mix)
  • 2 large eggs
  • cup vegetable oil
  • 10 Oreo cookies roughly crushed
  • 1 cup M&M's divided

Instructions

  • Preheat the oven to 350°F. Line an 8x8-inch baking dish with parchment paper or lightly grease the pan.
  • In a large mixing bowl, combine the Funfetti cake mix, eggs, and vegetable oil until a thick cookie dough forms.
  • Fold in the crushed Oreos and about ¾ cup of the M&M's, reserving the remaining M&M's for topping.
  • Press the dough evenly into the prepared baking dish.
  • Sprinkle a few additional crushed Oreos over the top.
  • Bake for 22-28 minutes, or until the edges are lightly golden and the center is set.
  • Remove from the oven and immediately sprinkle the remaining M&M's over the warm cookie bars.
  • Allow the bars to cool completely before slicing and serving.

Notes

I used Patriotic Funfetti Cake Mix, but any Funfetti cake mix variety will work.
Do not overbake. The bars will continue to set as they cool.
Reserve some M&M's for topping after baking for a bakery-style look.
Store leftovers in an airtight container at room temperature for up to 5 days.
Freeze individual bars for up to 3 months.
