Ingredients

  • 1 24 oz jar dill pickle chips (reserve juice)
  • 1 tablespoon light brown sugar
  • 1 ¾ teaspoons kosher salt divided
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 pound boneless skinless chicken thighs, cut into 2-inch pieces
  • 4 teaspoons olive oil
  • 1 ½ teaspoons ranch seasoning mix

For the Buttery Pickle Ranch Sauce

  • 3 tablespoons butter melted
  • 1 tablespoon ranch seasoning mix
  • 1 –2 teaspoons pickle juice
  • 2 teaspoons fresh dill or 1 teaspoon dried dill
  • Optional: squeeze of fresh lemon juice
  • 1 garlic clove finely minced
  • 2 tablespoons finely grated parmesan cheese

Instructions

  • In the pickle jar, whisk together the pickle juice, brown sugar, 1 teaspoon salt, garlic powder, and smoked paprika until fully combined. Add the chicken pieces, ensuring they are completely submerged. Cover and refrigerate for at least 3 hours or up to 12 hours for maximum flavor.
  • Remove the chicken from the marinade and pat dry with paper towels. Thread the chicken and pickle chips onto skewers, alternating for even flavor and texture in each bite.
  • Brush the skewers lightly with olive oil, then sprinkle evenly with ranch seasoning and the remaining ¾ teaspoon salt.
  • Heat your grill to medium-high heat (about 400–425°F) and lightly oil the grates to prevent sticking.
  • Place skewers directly on the grill and cook for 8–12 minutes, turning every few minutes, until the chicken is fully cooked and lightly charred. The internal temperature should reach 165°F.
  • In a microwave-safe bowl, melt the butter. Stir in ranch seasoning, pickle juice, garlic, parmesan and dill until smooth and fully combined. Add a small squeeze of lemon juice if desired.
  • Transfer skewers to a serving platter and drizzle generously with the buttery pickle ranch sauce. Garnish with additional dill if desired and serve immediately.
