Instructions
In the pickle jar, whisk together the pickle juice, brown sugar, 1 teaspoon salt, garlic powder, and smoked paprika until fully combined. Add the chicken pieces, ensuring they are completely submerged. Cover and refrigerate for at least 3 hours or up to 12 hours for maximum flavor.
Remove the chicken from the marinade and pat dry with paper towels. Thread the chicken and pickle chips onto skewers, alternating for even flavor and texture in each bite.
Brush the skewers lightly with olive oil, then sprinkle evenly with ranch seasoning and the remaining ¾ teaspoon salt.
