Ingredients

For The Mango Peach Salsa

  • 3 peaches peeled and diced
  • 1 large ripe mango peeled and diced
  • ½ cup red onion finely chopped
  • cup fresh cilantro chopped
  • 1 jalapeño seeded and minced
  • Juice of 1 large lime
  • Kosher salt to taste

For The Salmon

Option 1: Shortcut Version

  • 2 package Sea Cuisine Citrus Herb Salmon

Option 2: Fresh Grilled Salmon

  • 4 salmon fillets about 1-inch thick
  • 1 tablespoon olive oil
  • Kosher salt to taste
  • Black pepper to taste
  • 2 tablespoons honey or hot honey

Instructions

Make The Mango Peach Salsa

  • Add the diced peaches, mango, red onion, cilantro, jalapeño, lime juice, and kosher salt to a large mixing bowl.
  • Gently stir until all ingredients are evenly combined.
  • Allow the salsa to rest for 15 to 20 minutes so the flavors can meld together while you prepare the salmon.

Cook The Salmon

  • If using Sea Cuisine Citrus Herb Salmon, cook according to the package directions.
  • If using fresh salmon, pat the fillets dry and brush both sides lightly with olive oil.
  • Season with kosher salt and black pepper.
  • Drizzle the tops with honey or hot honey.
  • Grill over medium-high heat for 4 to 5 minutes per side, or until the salmon flakes easily with a fork and reaches your desired doneness.

Assemble And Serve

  • Transfer the cooked salmon to a serving platter or individual plates.
  • Spoon a generous amount of mango peach salsa over each salmon fillet.
  • Garnish with additional cilantro and fresh lime wedges if desired.
  • Serve immediately.
