Mini S'mores Skillet Cookies

These Mini S'mores Skillet Cookies combine graham cracker crusts, melty chocolate, gooey marshmallows, and chocolate chip cookie dough for an easy summer dessert that's perfect for parties, barbecues, Fourth of July celebrations, and family gatherings. Ingredients

For the Cookies

  • 6 Mini Keebler Ready Crust Graham Cracker Pie Crusts
  • 18 pieces Hershey's Milk Chocolate about 3 pieces per crust
  • 6 large marshmallows
  • 1 package refrigerated chocolate chip cookie dough

Optional Patriotic Topping

  • 6 Pillsbury Patriotic Shape Cookies

For Serving

  • Ice cream any flavor
  • Chocolate syrup
  • Sprinkles

Instructions

  • Preheat your oven to 325°F and line a baking sheet with parchment paper if desired.
  • Place the mini graham cracker crusts on the prepared baking sheet.
  • Add 3 pieces of Hershey's chocolate to the bottom of each graham cracker crust.
  • Place 1 large marshmallow on top of the chocolate in each crust.
  • Divide the cookie dough into 6 portions. Roll each portion into a ball and flatten into a circle large enough to completely cover the marshmallow and reach the edges of the crust.
  • Place the flattened cookie dough over each marshmallow and gently press the edges down to seal.
  • For a patriotic version, place one Pillsbury Patriotic Shape Cookie on top of each cookie.
  • Bake for approximately 12 minutes, or until the cookie dough is cooked through and lightly golden.
  • Remove from the oven and allow the cookies to cool for 5 to 10 minutes.
  • Top each warm cookie with a scoop of your favorite ice cream, a drizzle of chocolate syrup, and sprinkles.
  • Serve immediately and enjoy.

These cookies are best served warm while the chocolate and marshmallow are still gooey.
Leftover cookies can be stored in an airtight container and reheated before serving.
Do not add the ice cream until just before serving.
