Ingredients
2teaspoonsminced fresh garlic
1teaspoonminced fresh ginger
3tablespoonssoy sauce
1tablespoonrice vinegar
2teaspoonstoasted sesame oil
2tablespoonsred curry paste
1/2cupfull-fat coconut milk or coconut cream
1/2cupwater
5cupschopped bok choy
20frozen chicken or pork dumplings
3tablespoonschopped cilantro
1/4cupsliced green onions
2teaspoonssesame seeds
chili crunch oiloptional
Instructions
Preheat oven to 375°F.
In a casserole dish, stir together garlic, ginger, soy sauce, rice vinegar, sesame oil, curry paste, coconut milk, and water until smooth.
Add the chopped bok choy and toss lightly to coat in the sauce.
Arrange frozen dumplings on top of the bok choy mixture.
Cover with foil and bake for 25 minutes, until dumplings are heated through.
Divide dumplings and bok choy among plates and spoon sauce from the pan over the top.
Garnish with cilantro, green onions, sesame seeds, and chili crunch oil.

Dumplings can be cooked directly from frozen.Use full-fat coconut milk for the creamiest sauce.Add extra coconut milk or water if you prefer more sauce.Chili crunch oil adds flavor and spice but can be omitted.
