One-Pan Dumpling Dinner

An easy one pan dumpling dinner made with frozen dumplings, bok choy, garlic, ginger, and a creamy coconut curry sauce baked together for a quick 30-minute weeknight meal.

Ingredients

  • 2 teaspoons minced fresh garlic
  • 1 teaspoon minced fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons red curry paste
  • 1/2 cup full-fat coconut milk or coconut cream
  • 1/2 cup water
  • 5 cups chopped bok choy
  • 20 frozen chicken or pork dumplings
  • 3 tablespoons chopped cilantro
  • 1/4 cup sliced green onions
  • 2 teaspoons sesame seeds
  • chili crunch oil optional

Instructions

  • Preheat oven to 375°F.
  • In a casserole dish, stir together garlic, ginger, soy sauce, rice vinegar, sesame oil, curry paste, coconut milk, and water until smooth.
  • Add the chopped bok choy and toss lightly to coat in the sauce.
  • Arrange frozen dumplings on top of the bok choy mixture.
  • Cover with foil and bake for 25 minutes, until dumplings are heated through.
  • Divide dumplings and bok choy among plates and spoon sauce from the pan over the top.
  • Garnish with cilantro, green onions, sesame seeds, and chili crunch oil.

Notes

Dumplings can be cooked directly from frozen.
Use full-fat coconut milk for the creamiest sauce.
Add extra coconut milk or water if you prefer more sauce.
Chili crunch oil adds flavor and spice but can be omitted.
