These 3-ingredient Cake Mix Pumpkin Cookies are super simple to make and packed with cozy, spiced, fall flavor. They're the perfect easy autumn treat to enjoy all season long.
Drop spoonfuls of dough (about 2 tablespoons each) onto the prepared baking sheet. I made 5 large cookies, but you can easily make smaller cookies by scooping less dough—just adjust the bake time down by a couple minutes.
Bake for 12–15 minutes, or until the cookies are set and slightly golden on the edges.
Let cool on a wire rack before adding icing.
Beat cream cheese & butter until smooth.
Add sugar & vanilla, whip until fluffy.
Frost cooled cookies, sprinkle with pumpkin spice or cinnamon.
