Ingredients

  • 1 wheel brie cheese
  • 1 cup fresh strawberries diced
  • 2 tablespoons honey
  • 1 –2 tablespoons balsamic glaze
  • 1 tablespoon fresh basil chopped
  • Crostini crackers, toasted baguette slices, or warm bread for serving

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and lightly grease a small oven-safe baking dish or skillet if desired.
  • Add the diced strawberries evenly to the bottom of the baking dish. As the strawberries bake, they become soft, juicy, and slightly jammy, creating the perfect sweet base for the baked brie.
  • Place the wheel of brie into the center of the baking dish on top of the strawberries.
  • Using a small knife, lightly score the top of the brie in a crisscross pattern. Scoring the brie helps the cheese melt evenly while allowing the honey to soak into the cheese as it bakes.
  • Drizzle the honey evenly over the top of the brie. The honey adds sweetness and creates the perfect balance with the creamy brie and fresh strawberries.
  • Bake for 12–15 minutes or until the brie is soft and melty in the center while still holding its shape.
  • Remove the baked brie from the oven and immediately top with chopped fresh basil and a drizzle of balsamic glaze.
  • Serve warm with crostini, crackers, toasted baguette slices, or warm crusty bread for dipping and scooping.

Notes

  • Leave the rind on the brie while baking because it helps the cheese hold its shape and becomes soft and edible once baked.
  • Fresh strawberries work best for this recipe because frozen strawberries release too much moisture.
  • Do not overbake the brie or the cheese may burst open too much and lose its creamy texture.
