Ingredients

  • 6 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • ΒΌ cup fresh mint chopped
  • 1 small cucumber diced (optional)
  • Juice of 1 lime
  • 1 tablespoon honey
  • Pinch of sea salt
  • Fresh cracked black pepper to taste

Instructions

  • Add the watermelon, feta, mint, and cucumber (if using) to a large serving bowl.
  • In a small bowl, whisk together the lime juice, honey, salt, and pepper.
  • Drizzle the dressing over the salad and gently toss to combine.
  • Garnish with additional mint and feta.
  • Serve immediately or chill until ready to serve.

Notes

Storage:
  • Store leftovers in an airtight container in the fridge for 1-2 days. Drain excess liquid before storing, and if possible, store salad in a strainer or colander so the liquid can drain as it sits. Watermelon releases a lot of moisture, so leftovers can be slightly watery!
  • Prep the components to this salad in advance and store separately in airtight containers. For the best texture combine ingredients right before serving, gently mix, and enjoy.
