Air Fryer Big Mac Egg Rolls
These Air Fryer Big Mac Egg Rolls are a crispy, easy appetizer filled with seasoned ground beef, melty American cheese, dill pickles, and classic Big Mac-inspired flavors. They’re air fried instead of deep fried for a golden, crunchy wrapper, then served with a creamy homemade special sauce for dipping.
I’m always looking for recipes that my kids will actually get excited about, and anything that turns a familiar dinner into something they can dip is usually a win in our house. These started as a fun twist on cheeseburgers, but after making them in the air fryer, I knew they were going into our regular rotation. The outside gets SO crispy while the inside stays cheesy and loaded with all those burger flavors—and, honestly, the special sauce is what brings the whole thing together.
They’re also one of those recipes that works for just about anything. I’ll make them for an easy family dinner with fries, but they’re just as good added to a game day spread with my Crispy Baked Chicken Wings and Pizza Dip. Best of all, these cheeseburger egg rolls take just 10 minutes to cook in the air fryer, so you get that crispy, fried texture without having to actually deep fry anything.

Why You’ll Love This Recipe

- Easy to customize: Add bacon, jalapeños, extra pickles, or your favorite cheese.

Ingredients You’ll Need
You only need a handful of simple ingredients to make these crispy Air Fryer Big Mac Egg Rolls. Here’s what you’ll need:
- Ground sirloin: I like using 91/9 ground sirloin because it’s lean enough that the filling doesn’t become overly greasy while still having plenty of flavor.
- Onion: A little diced onion gives the ground beef that classic burger flavor. Dried minced onion can also be used in a pinch.
- Salt and black pepper: Keep the seasonings simple and let all those cheeseburger flavors shine.
- Yellow mustard: Adds tanginess and gives the beef filling more of that classic burger flavor.
- Ketchup: Adds just the right amount of sweetness and tomato flavor to the beef.
- Worcestershire sauce: Adds a deeper, savory flavor to the ground beef.
- Egg roll wrappers: These create the perfectly crispy shell. You can usually find them in the refrigerated produce section of the grocery store.
- American cheese: This melts perfectly inside the egg rolls and gives them that classic cheeseburger taste. You can substitute cheddar cheese if you prefer.
- Dill pickles: Don’t skip these! Chopped dill pickles add crunch and tanginess that cuts through the rich beef and melted cheese.
- Avocado or olive oil spray: A light coating helps the egg roll wrappers become crispy and golden in the air fryer without deep frying.
- Sesame seeds: A sprinkle on top gives the crispy egg rolls a fun sesame-seed-bun finish.
For the Special Sauce
- Mayonnaise: Creates the creamy base for the dipping sauce.
- Yellow mustard: Adds tang and that familiar burger-sauce flavor.
- Ketchup: Adds a little sweetness and tomato flavor.
- Apple cider vinegar: Adds acidity to balance the creamy mayo and rich egg rolls.
- Paprika: Adds another layer of flavor and a little color to the sauce.
How to Make Big Mac Egg Rolls in the Air Fryer
These are surprisingly easy to make once you get the hang of rolling the wrappers.
1. Cook the Ground Beef
Add the ground sirloin and diced onion to a large skillet over medium-high heat.
Season with salt and black pepper and cook, breaking the beef into small crumbles, until completely browned and no longer pink.

Drain any excess grease if needed.
2. Season the Cheeseburger Filling
Turn off the heat and stir the ketchup, yellow mustard, and Worcestershire sauce into the cooked ground beef.
Let the mixture cool for about 5 minutes before assembling the egg rolls.

Don’t skip the cooling time. Filling the wrappers with piping-hot beef can make them soft and harder to roll.
3. Fill the Egg Roll Wrappers
Place one egg roll wrapper on a clean surface with one corner pointing toward you so it looks like a diamond.

Place a slice of American cheese in the center. Add a scoop of the seasoned beef mixture followed by chopped dill pickles.

Be careful not to overfill the wrapper. You’ll get a much crispier egg roll if you can roll it tightly.
4. Roll the Egg Rolls
Keep a small bowl of water next to your work surface.
Dip your finger into the water and run it along the edges of the wrapper. Fold the bottom corner up over the filling, fold both side corners toward the center, and then tightly roll toward the top corner.

Use a little additional water to seal the final edge.
Place seam-side down while you finish assembling the remaining egg rolls.
5. Air Fry Until Crispy
Arrange the egg rolls in a single layer in the air fryer basket. Leave some space between each one so the hot air can circulate.
Lightly spray the egg rolls with oil and air fry.
Flip them partway through cooking, spray lightly with oil again, and sprinkle with sesame seeds.
Continue air frying until the wrappers are crispy and golden brown.

How to Make Big Mac-Inspired Special Sauce
You can’t make Big Mac egg rolls without a really good dipping sauce!
Whisk together mayonnaise, yellow mustard, ketchup, apple cider vinegar, and paprika until smooth and creamy.
You can make the sauce ahead of time and keep it refrigerated until you’re ready to serve.
Serve it alongside the warm egg rolls for dipping.

Tips for Crispy Air Fryer Egg Rolls
The difference between a good air fryer egg roll and a really crispy one usually comes down to a few simple things:
- Drain the beef well. Excess grease can make the inside of the wrapper soggy.
- Cool the filling slightly. Hot filling creates steam inside the wrapper.
- Don’t overfill the wrappers. About two tablespoons of beef filling is plenty.
- Roll them tightly. This keeps the filling inside and helps the egg rolls cook evenly.
- Seal the edges well. Use water along the wrapper edges to prevent them from opening.
- Use a little oil. A light coating helps create that fried texture without actually deep frying.
- Don’t overcrowd the air fryer. Cook in batches if necessary so air can circulate around each egg roll.
- Flip halfway through. This helps both sides become evenly browned and crispy.
- Eat them while they’re hot. Like most egg rolls, these are crispiest right after cooking.

Big Mac Egg Roll Variations
Once you’ve made the original version, these are really easy to customize.
- Bacon Cheeseburger Egg Rolls: Add finely chopped cooked bacon to the ground beef mixture.
- Spicy Cheeseburger Egg Rolls: Add diced jalapeños or a little hot sauce to the filling.
- Cheddar Cheeseburger Egg Rolls: Swap the American cheese for sliced cheddar.
- Extra Pickle Egg Rolls: Add more chopped dill pickles if you love that tangy pickle flavor.
- Onion-Free: Leave out the onion if your family isn’t a fan.
Make Ahead Instructions
If you’re making these for a party, you can prep the ground beef filling ahead of time.
Cook and season the beef, let it cool completely, and transfer it to an airtight container. Store it in the refrigerator until you’re ready to assemble the egg rolls.
For the crispiest results, I recommend assembling and air frying the egg rolls shortly before serving instead of cooking them completely ahead of time.
The special sauce can also be prepared ahead and refrigerated in an airtight container.
How to Store and Reheat Big Mac Egg Rolls
Refrigerator
Store leftover cooked egg rolls in an airtight container in the refrigerator for up to 3 days.
How to Reheat Egg Rolls in the Air Fryer
The air fryer is definitely the best way to reheat these.
Place the leftover egg rolls in the air fryer in a single layer and heat until the centers are warm and the wrappers are crispy again.
I don’t recommend microwaving them unless you’re in a hurry because the wrappers will become much softer.

Frequently Asked Questions
Can I use wonton wrappers instead of egg roll wrappers?
You can, but they will make much smaller Big Mac bites rather than full-size egg rolls. Wonton wrappers are thinner and smaller, so you’ll need to use less filling and reduce the air frying time. For this recipe, I prefer traditional egg roll wrappers because they’re easier to fill and give you the best ratio of crispy wrapper to cheeseburger filling.
Why are my egg rolls bursting in the air fryer?
Egg rolls can burst if they’re overfilled, rolled too loosely, or not sealed well around the edges. Be careful not to add too much beef filling, roll each wrapper tightly, and use a little water to completely seal the final edge. Leaving space between the egg rolls in the air fryer basket also helps them cook evenly without splitting.
What other dipping sauces are good with cheeseburger egg rolls?
The homemade special sauce is my favorite, but these are also delicious with ranch, spicy mayo, ketchup, honey mustard, burger sauce, or even a little extra yellow mustard. You can also set out a few different sauces if you’re serving the egg rolls for a party or game day.
