Ingredients

    • 4 garlic cloves, minced

    • 1 green bell pepper, chopped

    • ½ medium white onion, chopped

    • 1 can crushed tomatoes (14.5 ounces)

    • ½ pound raw boneless, skinless chicken breast

    • 5 cups low-sodium chicken broth (plus more if needed)

    • ½ cup shredded Parmesan cheese

    • 2 tbsp chopped fresh basil

    • 2 tsp chopped fresh oregano

    • 1 tsp kosher salt

    • ½ tsp black pepper

    • ¼ tsp red pepper flakes

    • 4 ounces uncooked penne pasta

    • Fresh basil or parsley for garnish

Instructions

    • Add garlic, bell pepper, onion, tomatoes, chicken, broth, Parmesan, basil, oregano, salt, black pepper, and red pepper flakes to a 5-quart slow cooker.

    • Cook on low for 7½ hours or high for 3½ hours.

    • Remove chicken, shred with two forks, and return to the cooker.

    • Stir in pasta and cook on high for 20-30 mins.

    • Serve topped with Parmesan and fresh basil or parsley.
