4 garlic cloves, minced
1 green bell pepper, chopped
½ medium white onion, chopped
1 can crushed tomatoes (14.5 ounces)
½ pound raw boneless, skinless chicken breast
5 cups low-sodium chicken broth (plus more if needed)
½ cup shredded Parmesan cheese
2 tbsp chopped fresh basil
2 tsp chopped fresh oregano
1 tsp kosher salt
½ tsp black pepper
¼ tsp red pepper flakes
4 ounces uncooked penne pasta
Fresh basil or parsley for garnish
Instructions
Add garlic, bell pepper, onion, tomatoes, chicken, broth, Parmesan, basil, oregano, salt, black pepper, and red pepper flakes to a 5-quart slow cooker.
Cook on low for 7½ hours or high for 3½ hours.
Remove chicken, shred with two forks, and return to the cooker.
Stir in pasta and cook on high for 20-30 mins.
Serve topped with Parmesan and fresh basil or parsley.
