Ingredients

  • 4 garlic cloves, minced
  • 1 green bell pepper, chopped
  • ½ medium white onion, chopped
  • 1 can crushed tomatoes (14.5 ounces)
  • ½ pound raw boneless, skinless chicken breast
  • 5 cups low-sodium chicken broth (plus more if needed)
  • ½ cup shredded Parmesan cheese
  • 2 tbsp chopped fresh basil
  • 2 tsp chopped fresh oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes
  • 4 ounces uncooked penne pasta
  • Fresh basil or parsley for garnish

Directions

  1. Add garlic, bell pepper, onion, tomatoes, chicken, broth, Parmesan, basil, oregano, salt, black pepper, and red pepper flakes to a 5-quart slow cooker.
  2. Cook on low for 7½ hours or high for 3½ hours.
  3. Remove chicken, shred with two forks, and return to the cooker.
  4. Stir in pasta and cook on high for 20-30 mins.
  5. Serve topped with Parmesan and fresh basil or parsley.

Can I Prep Chicken Parmesan Soup in Advance?

Yes! That’s what I love about Crockpots. You can either cook this on low 7.5 hours in advance or on high 3.5 hours ahead of time.

Storing Leftovers

Transfer any leftover Chicken Parmesan Soup to a Tupperware container and refrigerate, where it should stay fresh for several day. To reheat, microwave for 30-second intervals until preferred temperature is reached.
