This healthy Chicken Bruschetta is so flavorful and easy to make! It can be prepped quickly, is a healthier option, and is one of my family’s all-time favorite dinners.

Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons balsamic vinegar
  • 68 chopped tomatoes (I recommend Roma tomatoes that are on the firmer side, which makes them easier to cut)
  • 1/2 cup chopped basil
  • 2 cloves chopped garlic
  • 1/2 teaspoon salt (divided)
  • 1/2 teaspoon black pepper (divided)

Instructions

  • Preheat oven to 375 degrees Fahrenheit and lightly grease a 13 x 9-inch baking dish with cooking spray.
  • Chop the tomatoes into small pieces and combine in a large bowl with chopped garlic and basil.
  • Toss the tomato, basil, and garlic mixture with the balsamic vinegar and half (1/4 teaspoon) of the salt and pepper.
  • Place the chicken breasts in the baking dish and sprinkle with the remaining salt and pepper.
  • Pour the tomato mixture over the chicken breasts and spread evenly with a spatula. Top with mozzarella cheese.
  • Bake for 35-45 minutes or until the chicken is entirely cooked through and no longer pink on the inside.
  • Optional: Garnish with fresh basil and drizzle with balsamic vinegar.
