How to Make Delicious and Healthy Chicken Bruschetta
This healthy Chicken Bruschetta is so flavorful and easy to make! It can be prepped quickly, is a healthier option, and is one of my family’s all-time favorite dinners.
I’m half Italian and love making Italian dishes for my family. This recipe one of my regulars that I make all the time and I hope you find it as delizioso as my family does!

Ingredients
This healthy Chicken Bruschetta has just 8 easy-to-find ingredients that won’t leave you scurrying around the grocery store looking for random items. 🙂
- 3-4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 2 tablespoons balsamic vinegar
- 6-8 chopped tomatoes (I recommend Roma tomatoes that are on the firmer side, which makes them easier to cut)
- 1/2 cup chopped basil
- 2 cloves chopped garlic
- 1/2 teaspoon salt (divided)
- 1/2 teaspoon black pepper (divided)

Tip: For a healthier alternative, use a bit less cheese and add extra basil or balsamic vinegar for more flavor.
Directions
- Preheat oven to 375 degrees Fahrenheit and lightly grease a 13 x 9-inch baking dish with cooking spray.
- Chop the tomatoes into small pieces and combine in a large bowl with chopped garlic and basil.
- Toss the tomato, basil, and garlic mixture with the balsamic vinegar and half (1/4 teaspoon) of the salt and pepper.
- Place the chicken breasts in the baking dish and sprinkle with the remaining salt and pepper.
- Pour the tomato mixture over the chicken breasts and spread evenly with a spatula. Top with mozzarella cheese.
- Bake for 35-45 minutes or until the chicken is entirely cooked through and no longer pink on the inside.
- Optional: Garnish with fresh basil and drizzle with balsamic vinegar.

Perfect Presentation Platters
This healthy Chicken Bruschetta looks fantastic on its own, and here are some of my favorite products for prepping and presentation.
Salt and Pepper Holders: I absolutely love my marble pinch pots for salt and pepper, which you could fill with any spices you use regularly.
Chopping Boards: I use round wooden serving boards all the time, both for prep and serving. Some of my favorites are this white striped wooden board from Kirklands, this mango wood board from Target, this marble and wood rectangular tray from JC Penney, or this round marble and wood option from World Market.
Baking Dishes: For a slightly smaller baking dish, I use this white stoneware dish from Target all the time. This ceramic set of two from Walmart is also on sale! This clear 13 x 9 pan from Target is handy to have, and I also love this pretty blue ceramic pan from Rachel Ray for Target.
Serving Trays: If you’d prefer to transfer the dish to a serving tray once it is cooked, this oval serving tray with handles is dreamy and at a great price, as well as this is acacia wooden tray with handles from Walmart. I also use this circular wooden serving tray from Target all the time! Finally, this white porcelain tray or marble option (both from Walmart) can be used for so many different occasions!
Can I Make This Ahead of Time?
Yes! You can prep this healthy Chicken Bruschetta about a day ahead of time; just keep refrigerated. It’s possible to freeze it, but with such a low prep time, I’d recommend making it within a day or two of serving and skip freezing it.
Storing Leftovers
Cover leftovers with Saran Wrap or store in Tupperware containers and refrigerate. This should stay fresh for about 3 days in the refrigerator.
