These Crockpot Chicken Caesar Sandwiches are so easy to make and will have the whole family asking for seconds!!

Ingredients

    • 1.5 lbs boneless, skinless chicken breasts

    • 2 tbsp water

    • 1 tsp kosher salt

    • 1/2 tsp garlic powder

    • 1/8 tsp black pepper

Caesar Dressing:

    • 2 (5.3-ounce) containers nonfat plain Greek yogurt

    • 1/2 cup shredded Parmesan cheese

    • 2 tbsp fresh lemon juice

    • 1 1/2 tbsp Dijon mustard

    • 1 tbsp apple cider vinegar

    • 1 tbsp reduced-sodium soy sauce

    • 1/2 tsp garlic powder

    • 1/2 tsp kosher salt

    • 1/16 tsp black pepper

    • 1/3 cup chopped fresh parsley

    • 1/4 cup shredded Parmesan cheese Romaine lettuce

Instructions

    1. Place chicken in slow cooker, add water.
    2. Sprinkle salt, garlic powder, and black pepper on chicken.
    3. Cook for 4-5 hours on high, or 5-6 hours on low, until chicken is cooked.
    4. Stir together dressing ingredients.
    5. Shred cooked chicken. Add dressing and cook for 30 mins.
    6. Stir in parsley and Parmesan cheese.
    7. Serve on whole wheat buns with Romaine lettuce. Enjoy!
