    • 1 lb ground beef

    • 1 packet taco seasoning

    • 1 (10 oz) can diced tomatoes with green chilies

    • 1 (8-10 oz) package cheese tortellini

    • 1 cup shredded Mexican cheese

    • Cilantro or parsley for garnish (optional)

Instructions

    • In a large skillet, cook ground beef over medium heat until browned; drain grease.*

    • Stir in taco seasoning and water as directed on the packet.

    • Add diced tomatoes (undrained) and tortellini, stirring to combine.

    • Cover and simmer on medium-low for 5-7 minutes, until tortellini is tender.

    • Sprinkle cheese on top, cover, and cook for 2 minutes until melted.

    • Serve warm with optional toppings like sour cream or cilantro.

*Note: Be sure to drain grease into a lidded container that you can throw away (such as leftover Cream Cheese.) Pouring hot grease directly down the drain can cause costly plumbing damage.
