How to Make the Best Taco Tortellini!

Taco Tortellini is the 5-ingredient dinner you didn’t know you needed—quick, easy, and packed with flavor! 🙌 Who says tacos have to be in a shell!? 🌮

This is perfect for those busy weeknights when you want something quick but still crave that homemade goodness. ❤️

Ingredients for Taco Tortellini

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8-10 oz) package cheese tortellini
  • 1 cup shredded Mexican cheese
  • Cilantro or parsley for garnish (optional)

Directions

  1. In a large skillet, cook ground beef over medium heat until browned; drain grease.*
  2. Stir in taco seasoning and water as directed on the packet.
  3. Add diced tomatoes (undrained) and tortellini, stirring to combine.
  4. Cover and simmer on medium-low for 5-7 minutes, until tortellini is tender.
  5. Sprinkle cheese on top, cover, and cook for 2 minutes until melted.
  6. Serve warm with optional toppings like sour cream or cilantro.

*Note: Be sure to drain grease into a lidded container that you can throw away (such as leftover Cream Cheese.) Pouring hot grease directly down the drain can cause costly plumbing damage.

Can I Prep This in Advance?

This Taco Tortellini is such a fast dish that we’d recommend cooking this close to serving time! However, you can cook the meat up to several days before to save time. Just store in the refrigerator in a Tupperware container.

Storing Leftover Taco Tortellini

If you have any leftovers, cover with Saran Wrap, foil, or store in a Tupperware container and refrigerate, where it should last for several days. These leftovers are amazing cold or heated up in the microwave!
