2 pounds potatoes (Yukon Gold or Russet), peeled and cut into 1-inch cubes
3/4 cup mayonnaise
2 tbsp Dijon mustard
1 tbsp apple cider vinegar
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
3 hard-boiled eggs, chopped
Salt and pepper to taste
Paprika (optional, for garnish)
Optional Toppings:
Crumbled bacon
Chopped chives
Diced pickles
Shredded cheddar cheese
Sliced black olives
Sliced jalapeños
Instructions
Boil potatoes until they are fork-tender, about 10-12 minutes. Drain well and let cool slightly.
In a small bowl, whisk together mayonnaise, Dijon mustard, and apple cider vinegar until smooth. Season with salt and pepper.
In a large mixing bowl, combine potatoes, celery, red onion, and chopped hard-boiled eggs. Pour the prepared dressing over the potato mixture and toss until everything is coated.
Chill for at least 1 hour & sprinkle with Paprika.
