This Lemon Blueberry Trifle is your new spring obsession and is perfect for brunch, showers, or just because. Light, creamy, and packed with lemon goodness!

Ingredients

    • 2 cups Lifeway Lemon or Plain Kefir

    • 2 (8 oz) tub whipped topping (or 1 cup heavy cream, whipped)

    • 1 lemon, zested + juiced

    • 2 tbsp honey or maple syrup (to sweeten kefir)

    • 1 store-bought pound cake or angel food cake, cut into cubes

    • 2 cups fresh blueberries

    • Optional: crushed graham crackers or lemon cookies for topping

    • Optional: Fresh mint for garnish

Instructions

    • In a bowl, whisk kefir with lemon juice, zest, and honey/maple syrup.

    • Fold in whipped topping to make a creamy lemon filling.

    • In a trifle dish or individual jars, layer cake cubes, lemon kefir cream, and blueberries. Repeat layers.

    • Top with crushed graham crackers or cookies for crunch. Chill for 30 minutes or more.

    • Garnish with mint and lemon zest before serving.
