2 cups Lifeway Lemon or Plain Kefir
2 (8 oz) tub whipped topping (or 1 cup heavy cream, whipped)
1 lemon, zested + juiced
2 tbsp honey or maple syrup (to sweeten kefir)
1 store-bought pound cake or angel food cake, cut into cubes
2 cups fresh blueberries
Optional: crushed graham crackers or lemon cookies for topping
Optional: Fresh mint for garnish
Instructions
In a bowl, whisk kefir with lemon juice, zest, and honey/maple syrup.
Fold in whipped topping to make a creamy lemon filling.
In a trifle dish or individual jars, layer cake cubes, lemon kefir cream, and blueberries. Repeat layers.
Top with crushed graham crackers or cookies for crunch. Chill for 30 minutes or more.
