This Lemon Blueberry Trifle is Beyond Amazing!

This Lemon Blueberry Trifle is your new spring obsession and is perfect for brunch, showers, or just because. Light, creamy, and packed with probiotic goodness thanks to @LifewayKefir—aka the secret ingredient to that dreamy lemon layer.

Lemon Blueberry Trifle

Ingredients

  • 2 cups Lifeway Lemon or Plain Kefir
  • 2 (8 oz) tub whipped topping (or 1 cup heavy cream, whipped)
  • 1 lemon, zested + juiced
  • 2 tbsp honey or maple syrup (to sweeten kefir)
  • 1 store-bought pound cake or angel food cake, cut into cubes
  • 2 cups fresh blueberries
  • Optional: crushed graham crackers or lemon cookies for topping
  • Optional: Fresh mint for garnish

Directions

  1. In a bowl, whisk kefir with lemon juice, zest, and honey/maple syrup.
  2. Fold in whipped topping to make a creamy lemon filling.
  3. In a trifle dish or individual jars, layer cake cubes, lemon kefir cream, and blueberries. Repeat layers.
  4. Top with crushed graham crackers or cookies for crunch. Chill for 30 minutes or more.
  5. Garnish with mint and lemon zest before serving.

This Lemon Blueberry Trifle looks beautiful in one large trifle dish, or in individual mason jars! Here are some of our favorite products for easy shopping:

Trifle Dish: My trifle dish is from Target but is currently sold out. This Trifle Bowl with pedestal is very similar and is available on Amazon! I also love the pretty detail on this option (under $30!) and on this vintage design.

Individual Bowls: I used this blue-and-white checkered ice cream dish by MacKenzie-Childs, which also comes in black, gray, or pink.

Checkered Serving Boards: I used my Mackenzie-Childs check-chop board for both function and decor, which also comes in large. These are definitely investment pieces, but you can also check out a $30 version from Amazon or this heavy-duty version (also from Amazon!)

Kitchen Links: I get asked all the time about the products in the background of my kitchen. Much of it is from MacKenzie-Childs, which I have slowly grown a collection of over the years! My favorites are this checkered chopping board, my black and white checkered teapot, and the gray and white checkered utensil holder. I also have this enamel canister that you can find in smallmedium, or large.

Can I Prep This in Advance?

Yes! This needs at least 30 minutes to chill, which you can also do overnight. We wouldn’t recommend more than that to ensure that the Angel Food Cake doesn’t get soggy and the ingredients stay fresh.

Storing Lemon Blueberry Trifle Leftovers

If you have any leftovers, cover with foil or Saran Wrap or transfer to a Tupperware container and refrigerate. This should stay fresh for 2-3 days.
