This Lemon Blueberry Trifle is Beyond Amazing!
This Lemon Blueberry Trifle is your new spring obsession and is perfect for brunch, showers, or just because. Light, creamy, and packed with probiotic goodness thanks to @LifewayKefir—aka the secret ingredient to that dreamy lemon layer.

Ingredients
- 2 cups Lifeway Lemon or Plain Kefir
- 2 (8 oz) tub whipped topping (or 1 cup heavy cream, whipped)
- 1 lemon, zested + juiced
- 2 tbsp honey or maple syrup (to sweeten kefir)
- 1 store-bought pound cake or angel food cake, cut into cubes
- 2 cups fresh blueberries
- Optional: crushed graham crackers or lemon cookies for topping
- Optional: Fresh mint for garnish

Directions
- In a bowl, whisk kefir with lemon juice, zest, and honey/maple syrup.
- Fold in whipped topping to make a creamy lemon filling.
- In a trifle dish or individual jars, layer cake cubes, lemon kefir cream, and blueberries. Repeat layers.
- Top with crushed graham crackers or cookies for crunch. Chill for 30 minutes or more.
- Garnish with mint and lemon zest before serving.

Can I Prep This in Advance?
Yes! This needs at least 30 minutes to chill, which you can also do overnight. We wouldn’t recommend more than that to ensure that the Angel Food Cake doesn’t get soggy and the ingredients stay fresh.

Storing Lemon Blueberry Trifle Leftovers
If you have any leftovers, cover with foil or Saran Wrap or transfer to a Tupperware container and refrigerate. This should stay fresh for 2-3 days.
