Easy Pumpkin Chili

Easy pumpkin chili on a beautiful tray with tasty side options like cornbread

This simple pumpkin chili is the perfect fall comfort food as the weather gets cooler!

Ingredients

-2 pounds ground beef (can be substituted for ground turkey)
-1 (15 ounce) can Kidney Chili Beans
-1 (15 ounce) can Pinto Chili Beans
-1 (15 ounce) can puréed pumpkin
-3 cups vegetable juice
-1 (10 ounce) can Hunt’s Petite Diced Tomatoes
-1 (4 ounce) can green chiles
-1 packet of chili seasoning
-2 tablespoons pumpkin pie spice
-1 tablespoon brown sugar
-1 teaspoon cumin
-Salt and pepper to taste

Optional Side Suggestions: Cornbread, rolls, shredded cheese, avocados, tortilla or Frito chips, crackers, tomatoes, onions, or sour cream.

Instructions

1. In a large pot over medium heat, cook meat until browned, then drain.
2. Stir in the remaining ingredients and seasonings.
3. Simmer 1 hour

Notes

Tip: Never drain the hot grease from the meat directly into your sink, as it can cause costly damage to the pipes. I always pour mine into a small empty container with a lid that I have reused (like a plastic cream cheese or sour cream container), then seal and discard it into the garbage.
