This simple pumpkin chili recipe is so easy and convenient for busy weekends, hosting gamedays, or cozying up at home!
Fall is in full swing and I am here for it! An autumn breeze, golden leaves, cozy sweaters, and warm chili are some of my absolute favorite things. Even if you’re not a fan of pumpkin, I think you’ll love this recipe! The canned pumpkin thickens the chili, giving it a sweet yet subtle undertone and the warm spices are so rich and flavorful.
For this simple pumpkin chili, you just need one large pot for all of the ingredients! (Yay for fewer dishes!) I used this beautiful Cuisinart Pot from Target. First, brown the ground beef, which can be substituted for ground turkey for a healthier option.
Then, just add all of the rest of the ingredients and simmer on low to medium heat for one hour and enjoy! If you prefer thinner chili, you could also add water or chicken broth until the desired consistency is reached.
Never drain the hot grease from the meat directly into your sink, as it can cause costly damage to the pipes. I always pour mine into a small empty container with a lid that I have reused (like a plastic cream cheese or sour cream container), then seal and discard it into the garbage.
I used to think there wasn’t a pretty or fun way to present chili, but there are so many easy tips you can do to turn this simple pumpkin chili into a beautiful spread!
First, carefully transfer the chili to a larger serving bowl. One option I love is this Tureen with Lid and Ladle. Once transferred, I like to top the chili with a bit of parsley or cilantro to give it a little pop of color. Then, I placed the serving bowl in the middle of this circular wooden serving tray from Target and simply surrounded it with my favorite chili sides!
For an extra festive touch, you could also serve in pumpkin-shaped bowls, like these Pumpkin Bowls with Gold Stem, this Set of 2 Orange Pumpkin Bowls, or the Set of 4 White Pumpkin Bowls that I used.
My favorite side to add is cornbread, and I used a pumpkin cookie cutter to make these festive fall pumpkin shapes. (I find my store-bought cornbread mix in the baking aisle!) Some yummy other options include bread rolls, shredded cheese, avocados, tortilla or Frito chips, crackers, tomatoes, onions, or sour cream that you can add to the serving platter

-2 pounds ground beef (can be substituted for ground turkey)
-1 (15 ounce) can Kidney Chili Beans
-1 (15 ounce) can Pinto Chili Beans
-1 (15 ounce) can puréed pumpkin
-3 cups vegetable juice
-1 (10 ounce) can Hunt’s Petite Diced Tomatoes
-1 (4 ounce) can green chiles
-1 packet of chili seasoning
-2 tablespoons pumpkin pie spice
-1 tablespoon brown sugar
-1 teaspoon cumin
-Salt and pepper to taste
Optional Side Suggestions: Cornbread, rolls, shredded cheese, avocados, tortilla or Frito chips, crackers, tomatoes, onions, or sour cream.
1. In a large pot over medium heat, cook meat until browned, then drain.
2. Stir in the remaining ingredients and seasonings.
3. Simmer 1 hour
