Whip up this creamy lemon ricotta pasta in one pot for a quick, delicious meal that everyone will love. It’s our current fave!

Ingredients

    • 12 oz fettuccine or other pasta

    • 1 ½ cups ricotta cheese

    • ⅓ cup grated Parmesan cheese

    • 3 tbsp lemon juice

    • 3 tbsp chopped fresh parsley

    • 1 tsp salt ¼ tsp pepper

    • ½-1 cup reserved pasta water

    • 2 cloves minced garlic (or roasted garlic)

Instructions

    1. Bring a large pot of salted water to a boil. Cook pasta al dente, then strain, reserving 1 cup of pasta water.
    2. In a large bowl, combine ricotta, Parmesan, lemon juice, parsley, salt, and pepper.
    3. If using roasted garlic, mix it in. For minced garlic, heat 1 tbsp oil in a pan over medium heat.
    4. Cook garlic for 1 minute, then add to the ricotta mixture.
    5. Add ½ cup reserved pasta water to the empty pot. Stir in the ricotta mixture until creamy.
    6. Add the cooked pasta, mixing until evenly coated, adding more pasta water as needed for desired creaminess. Enjoy!
