We Are in Love with This Creamy Lemon Ricotta Pasta!

Whip up this creamy Lemon Ricotta Pasta in one pot for a quick, delicious meal that everyone will love. It’s our current fave and perfect for busy nights! 🍋✨

Ingredients

  • 12 oz fettuccine or other pasta
  • 1 ½ cups ricotta cheese
  • ⅓ cup grated Parmesan cheese
  • 3 tbsp lemon juice
  • 3 tbsp chopped fresh parsley
  • 1 tsp salt ¼ tsp pepper
  • ½-1 cup reserved pasta water
  • 2 cloves minced garlic (or roasted garlic)
Creamy Pasta Sauce

Directions

  1. Bring a large pot of salted water to a boil. Cook pasta al dente, then strain, reserving 1 cup of pasta water.
  2. In a large bowl, combine ricotta, Parmesan, lemon juice, parsley, salt, and pepper.
  3. If using roasted garlic, mix it in. For minced garlic, heat 1 tbsp oil in a pan over medium heat.
  4. Cook garlic for 1 minute, then add to the ricotta mixture.
  5. Add ½ cup reserved pasta water to the empty pot. Stir in the ricotta mixture until creamy.
  6. Add the cooked pasta, mixing until evenly coated, adding more pasta water as needed for desired creaminess. Enjoy your Lemon Ricotta Pasta!

Perfect Presentation Platters

You can serve this Lemon Ricotta Pasta from a casserole dish, serving bowl, or platter. Here are some of my favorites!

Casserole Dish: I used my Mac-Kenzie Childs Checkered Casserole Dish! This is an investment, so Target also has a high-quality enamel version in either small or large! We also love this Pumpkin Casserole Dish by the Pioneer Woman for Walmart if you’re using this during the Fall.

Large Serving Bowls: If you’d prefer to serve this in a bowl, I love this Wooden Serving Bowl from JC Penney (that’s on sale!) or you may also love this beautiful stoneware bowl. Target also has a beautiful plaid serving bowl that’s perfect for summers and outdoors! For a higher-end choice, I love this white floral bowl by MacKenzie-Childs, as well this everyday bowl from her collection, which also comes in blue and now pink!

Checkered Bowls: I used Mac-Kenzie Child’s Everyday Bowl! You can also use this smaller Ice Cream Dish, which also comes in blue!

Can I Prep This Lemon Ricotta Pasta in Advance?

Yes! You can cook the pasta al dente in advance to save time (we’d recommend up to one day before, stored in the fridge.) Since the sauce comes together so quickly, the sauce is best served warm and close to serving time.

Storing Leftovers

Store any leftovers in a Tupperware container or Ziploc Bag and refrigerate, where it should stay fresh for several days. You can reheat in the microwave on 20-second intervals, and we found this to be equally delicious served cold!
