Baked Caesar Chicken

This Baked Caesar Chicken is a 3 ingredient delicious, fresh, and flavorful meal that can be served on its own, over a salad, or in a wrap! It makes for the perfect meal prep recipe and will be loved by even the pickiest of eaters.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup creamy Caesar dressing I used Boathouse. You can also use a light option!
  • 1/2 cup Parmesan cheese finely grated
  • 2 tablespoons coarsely chopped parsley

Instructions

  • Preheat the oven to 400ºF.
  • Pound 4 boneless, skinless to an even 1/2-inch thickness.
  • Pour 1 cup creamy Caesar dressing in a baking dish large enough to fit the chicken in a single layer. Place the chicken breasts in the baking dish, then flip them so that they are evenly coated with dressing.
  • Bake until the chicken is golden-brown and cooked through (about 20 to 25 minutes.)
  • Heat the broiler to high. Remove the baking dish from the oven. Sprinkle the Parmesan over the chicken in an even layer.
  • Broil until the cheese is melted and lightly browned, 3 to 4 minutes. If you don’t have a broiler don’t worry, you can just bake until cheese is melted!
  • Serve the chicken garnished with the parsley if using.

Storage: 
Place any leftover Chicken Caesar Bake in a zip top bag or airtight container and keep in the fridge, where it should stay fresh for 2 to 3 days. 
This is also a great recipe to prep in advance. You can marinate up to 1 to 2 days ahead of time.
If you're meal prepping, you can freeze cooked chicken for up to a 1 month! I'd recommend storing in an airtight zip top bag before freezing.
