Easter Mimosas

These Easter Mimosas are a festive and easy Easter brunch cocktail made with Champagne or Prosecco and carrot-inspired orange juice ice cubes for a beautiful spring presentation.

Ingredients

  • 1 bottle Champagne or Prosecco 750 ml
  • 2 cups orange juice
  • 1 –2 fresh oranges sliced thin
  • 1 lime sliced thin (or fresh mint leaves)
  • Ice cube tray

Instructions

  • Slice oranges into narrow strips.
  • Place orange strips into ice cube tray cavities.
  • Add lime slices or mint to create carrot tops.
  • Fill cavities with orange juice.
  • Freeze 2–3 hours until solid.
  • Place frozen cubes into glasses.
  • Pour chilled Champagne over cubes.
  • Garnish and serve immediately.
