Loaded Baked Potato Dip

This easy Loaded Baked Potato Dip is creamy, cheesy, and loaded with big, bold flavor. It's the perfect crowd-pleasing appetizer for tailgates, parties and entertaining all year long.

Ingredients

  • 8 oz sour cream
  • 8 oz cottage cheese
  • 8 oz cream cheese softened
  • 2 cups shredded cheddar cheese divided
  • 6 slices bacon cooked and crumbled (reserve some for garnish)
  • 1/4 cup chopped chives reserve some for garnish
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix sour cream, cottage cheese, and cream cheese until smooth.
  • Stir in 1 ½ cups cheddar, bacon, chives, and seasonings.
  • Spread into a greased baking dish and top with remaining cheese.
  • Bake for 20-25 minutes until bubbly.
  • Garnish with bacon and chives.
  • Serve warm with crackers, chips, veggies, fries, or potato wedges.

Notes

Storage:
  • Store leftover dip in an airtight container or covered with plastic wrap or foil in the fridge for up to 3 days. Reheat in the microwave in 30-second intervals, or rewarm in a 350° oven until heated through.
  • We don't recommend freezing this dip, as the texture can change once frozen and thawed. Enjoy this fresh!
  • Assemble the dip up to a day or two in advance, then store in the fridge until you're ready to bake and serve.
Tips: 
  • Use Room-Temperature Cream Cheese: Let it soften and come to room temperature so it's easy to work with. This will ensure you have a smooth, lump-free dip base.
  • Reserve Some Bacon and Cheese: Remember to save a little extra bacon and shredded cheese to sprinkle on top before baking.
  • Serve with Sturdy Dippers: You want something hearty that can hold the dip. Kettle potato chips, crackers, pretzels, pita chips, fresh veggies or even waffle fries are all great options.
  • Assemble Ahead of Time: Make the dip in advance then refrigerate until you're ready to bake and serve.
  • Always use full-fat cottage cheese, sour cream, and cream cheese for best taste and texture. While buying a lower-fat version works, it won't be quite as delicious.
