Ingredients

For the Roasted Tomatoes:

  • 1 pound rainbow cherry tomatoes
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 2 teaspoons Italian seasoning
  • 1 tablespoon minced garlic
  • 1/3 cup olive oil

For Finishing:

  • 8 ounces burrata filling or 1 large burrata ball, torn apart
  • 1/4 cup fresh basil chopped
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons balsamic glaze

Instructions

  • Preheat your oven to 400°F.
  • Add the cherry tomatoes to a baking dish. Sprinkle with parsley, salt, pepper, red pepper flakes, Italian seasoning, and garlic.
  • Pour the olive oil over the tomatoes and toss until everything is evenly coated.
  • Roast for 30-45 minutes, or until the tomatoes begin to burst and become soft and jammy.
  • Remove the baking dish from the oven and allow it to cool for 5 minutes.
  • Sprinkle with fresh basil and grated Parmesan cheese.
  • Spoon the burrata filling directly over the warm roasted tomatoes.
  • Finish with a generous drizzle of balsamic glaze.
  • Serve warm with crostini, toasted bread, or crackers for dipping.

Whole burrata can be used in place of burrata filling.
