For the Roasted Tomatoes:
1poundrainbow cherry tomatoes
1/4cupfresh parsleychopped
1teaspoonsalt
1teaspoonblack pepper
1teaspoonred pepper flakes
2teaspoonsItalian seasoning
1tablespoonminced garlic
1/3cupolive oil
For Finishing:
8ouncesburrata fillingor 1 large burrata ball, torn apart
1/4cupfresh basilchopped
1/3cupgrated Parmesan cheese
3tablespoonsbalsamic glaze
Instructions
Preheat your oven to 400°F.
Add the cherry tomatoes to a baking dish. Sprinkle with parsley, salt, pepper, red pepper flakes, Italian seasoning, and garlic.
Pour the olive oil over the tomatoes and toss until everything is evenly coated.
Roast for 30-45 minutes, or until the tomatoes begin to burst and become soft and jammy.
Remove the baking dish from the oven and allow it to cool for 5 minutes.
Sprinkle with fresh basil and grated Parmesan cheese.
Spoon the burrata filling directly over the warm roasted tomatoes.
Finish with a generous drizzle of balsamic glaze.
