S'mores Rice Krispie Treats (5 ingredients)

Ingredients

  • 6 Tbsp salted butter
  • 16 oz bag mini marshmallows
  • 6 cups Golden Grahams cereal
  • 1 cup semi-sweet chocolate chips/chunks
  • 4 snack size Hershey's Milk Chocolate Bars or 1 regular-size 1.55oz bar

Instructions

  • Coat a 9x13-inch baking dish with cooking spray. Place cereal in a large bowl.
  • Add chocolate chips. Add 2 1/2 cups of marshmallows. Set aside the 1/2 cup marshmallows for later.
  • In a large pot, melt the butter over medium-low heat. Add remaining marshmallows. Stir constantly until just barely melted. Let cool.
  • Pour melted marshmallows over cereal mixture. Stir until evenly coated. Pour into the prepared pan and flatten.
  • Press Hershey chocolate squares and reserved 1/2 cup of mini marshmallows into the top of the Krispie treats.
  • Cool completely, then cut into squares and serve.

Notes

Storage:
  • Store leftovers in an airtight container at room temperature for up to 3 days. The marshmallow topping is best enjoyed within the first day or two for the best texture, which shouldn't be a problem since they're so delicious!
  • Make these treats ahead of time. Prep them up to two days in advance and store in the refrigerator. Let them come to room temperature before serving again. You can also heat them in the microwave at 15-second intervals if you'd like to serve them warm.
Tips: 
  • Watch Marshmallows Closely: Keep an eye on them if you plan on finishing them under the broiler — marshmallows toast fast and you don't want them to burn!
  • Let Bars Cool Slightly Before Cutting: This will help them set up and give you cleaner slices.
  • Use a Hot Knife: Run the knife under warm water, then wipe dry before using. This will help to cut through the melted chocolate and marshmallow cleanly.
  • Line Pan With Parchment: To help with easy removal from the pan and minimal clean up.
  • Use Mini Marshmallows over Regular-Sized: We find they melt at a more even rate and also distribute within the bars more evenly as well.
