These Easy Baked Chicken Bites Are the Best

These 20-minute Baked Chicken Bites are juicy, flavorful, and so easy to make when you need dinner in a hurry! Toss them in a baking dish, bake until golden, and serve however you like — with dipping sauce, on salads, in wraps, or tossed into pasta. The ultimate weeknight win! 🍴

Ingredients

  • 1 ½ lbs chicken breast or thighs, cut into bites
  • 2 tbsp olive oil or butter
  • 2 tsp chicken base (dissolved in 2 tbsp water)
  • 1 tsp garlic
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp oregano (optional)
  • ½ tsp salt (adjust for base)
  • ½ tsp pepper

Directions

  1. Heat oven to 400°F.
  2. Mix olive oil + chicken base; toss with chicken.
  3. Add seasonings and coat well.
  4. Spread in greased 9×13 dish in one layer.
  5. Cover with foil, bake 15 min.
  6. Remove foil, stir, bake 8–10 more until 165°F.
  7. Rest 3 min before serving.
  8. Serve with: rice, mashed potatoes, roasted veggies, or toss in buffalo, BBQ, or honey garlic sauce.

Baking Dish: This 13 x 9 baking dish is so handy! We’d also recommend this set of 4 in various sizes!

Checkered Serving Boards: I used my Mackenzie-Childs check-chop board for both function and decor, which also comes in large. These are definitely investment pieces, but you can also check out a $30 version from Amazon or this heavy-duty version (also from Amazon!)

Kitchen Links: I get asked all the time about the products in the background of my kitchen. Much of it is from MacKenzie-Childs, which I have slowly grown a collection of over the years! Can I Prep This Recipe in Advance?

Absolutely! You can do steps 1-3 ahead of time and let the chicken marinate for 1-2 days in the refrigerate before you are ready to bake. Once cooked, we recommend serving warm for a delicious meal.

Storing Leftover Baked Chicken Bites

Place any leftovers in a Ziploc Bag or Tupperware container and refrigerate, where they should stay fresh for several days.
