How to Make a Delicious Jalapeño Popper Chicken Salad

Spice up your summer lunch with this Jalapeño Popper Chicken Salad! 🌶️🥗 Perfectly creamy, crunchy, and packed with flavor. Fresh vibes all the way!

Ingredients

  • 10 slices of crispy bacon, crumbled (can substiute turkey bacon)
  • 3 jalapenos diced, stem & seeds removed
  • 5 green onions
  • 4 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese (can substitute light cream cheese)
  • 1/2 cup mayonnaise (can substitute light mayo)
  • Salt and pepper to taste

Directions

  1. In a medium-size bowl, add chicken, bacon, jalapenos, green onions, and cheese.
  2. Add mayo, cream cheese, and salt, and pepper to taste.
  3. Stir until completely mixed.
  4. Refrigerate until ready to eat.

Perfect Presentation Platters

This Jalapeño Popper Chicken Salad would look great either in a serving bowl or platter! Some of my favorite suggestions are:

Large Serving Bowls: If you are making a larger batch, there are so many choices for any budget! I love this beautiful stoneware bowl or you also can’t go wrong with this option from JC Penney for larger batches. For a higher-end choice, I love this white floral bowl by MacKenzie-Childs, as well this everyday bowl from her collection, which also comes in blue.

White Serving Platters: I used one of this set of two white porcelain platters for the side items, which I absolutely love! You could also go with this large white porcelain platter or this faux white marble tray from Walmart is also a great choice!

Individual Plates: I love the black-and-white checkered plates from MacKenzie-Childs, which also come in a blue or pink version! For adorable salad plates, I am obsessed with this beautiful coordinating set from Target for a great price!

Kitchen Links: I get asked all the time about my favorite products. I especially love MacKenzie-Childs, which I have slowly grown a collection of over the years! My favorites are this checkered chopping board, my black and white checkered teapot, and the gray and white checkered utensil holder. I also have this enamel canister that you can find in smallmedium, or large.

Can I Prep This in Advance?

Yes! Since this needs to be refrigerated until serving time, you could prep up to about a day ahead of time and just store in the fridge. Be sure to keep it in a Tupperware container or seal tightly with Saran Wrap so it stays fresh. A Ziploc Bag would also do the trick!

Storing Leftover Jalapeño Popper Chicken Salad

What I love most about this recipe is that it makes delicious leftovers for both lunch and dinner! Keep any leftovers in a Tupperware container, Ziploc Bag, or covered tightly with Saran Wrap, where it should stay fresh for 2-3 days.
