How to Make a Refreshing Cobb Pasta Salad
This Cobb Pasta Salad is a delicious main course or side dish all summer long! The homemade dressing is SO good and easy to make!!

Ingredients
Cobb Pasta Salad
- 8 oz Pasta
- 2 cups Grilled Chicken, Diced into pieces
- 1/2 cup Red Onion, diced
- 2 Hard Boiled Eggs, chopped
- 4 slices cooked Bacon, chopped
- 1/2 cup Cherry Tomatoes, halved
- 1 Avocado, diced
- 1 cup romaine lettuce
- 1/4 cup Blue Cheese (optional)
- 1 tsp Salt & Pepper (each)
Dressing Ingredients:
- 1 tbsp Dijon Mustard
- 1/3 cup Mayo
- 1 tbsp Honey
- 1 tbsp Red Wine Vinegar
- 1 tbsp Chives
- Salt and Pepper to taste `

Directions
- Cook your pasta al dente according to the box directions.
- In a medium to larger bowl, combine the grilled chicken, red onion, tomatoes, hard boiled eggs, and blue cheese. Add in the cooled pasta and lettuce.
- For the Dressing: Combine all the ingredients together and whisk it until combined. Test taste and season with salt and pepper to taste.
- Pour the dressing over the salad mixture and toss until it’s fully mixed and enjoy!

Can I Prep This Cobb Pasta Salad Ahead of Time?
Yes! You can cook the pasta and chicken in advance, as well as the dressing. (Just shake the dressing well before adding it on.) Wait until closer to serving time to slice the avocados to ensure they stay fresh and don’t start to brown.
Storing Leftovers
Store any leftover Cobb Pasta Salad in a Tupperware container and store in the refrigerator, where it should stay fresh for about 3 days. You can also store in a Z
