How to Make Boo-tiful Ghost Apple Pie Bites
These delicious Ghost Apple Pie Bites look amazing yet are so easy to make for Halloween! They are (almost) too adorable to eat! 👻🍏
Combining the classic fall flavors of apple pie with cute ghost shapes, you’ll have such a fun and festive treat for Halloween!
Ingredients
- 2 pie crusts
- 2 cups chopped apples
- ¼ cup granulated sugar
- 2 tbsp all-purpose flour
- ½ tsp vanilla extract
- ½–1 tsp ground cinnamon
- ⅛ tsp ground nutmeg
- 1 large egg, beaten
- 1 tbsp milk
- 1 tbsp butter, cubed (optional)
- Coarse sugar for sprinkling (optional)
- Supplies: Ghost-shaped cookie cutter
I loved whipping up some spooky fun with these mini ghost apple pies featuring Stemilt Sweet Tango apples! The Sweet Tango apples are perfect for this recipe because they are extra juicy with a hint of fall spice.

Directions
- Preheat oven to 375°F (190°C).
- Mix apples, sugar, flour, vanilla, cinnamon, and nutmeg in a bowl.
- Roll out pie crusts and cut ghost shapes using a cookie cutter. Place half on a parchment-lined baking sheet.
- Spoon filling onto each, adding butter if desired.
- Top with remaining ghost shapes, sealing edges and crimping with a fork.
- Brush with egg wash (egg mixed with milk) and sprinkle with coarse sugar.
- Bake for 20-25 minutes until golden brown. Cool slightly, then enjoy!
If your ghost cookie cutter doesn’t have eyes or a mouth, you can create them using a straw or icing tip.
Be sure to leave a bit of a border with the apple pie filling so you have room to pinch the two ghost halves together. 🙂
Once the top ghost section is pinched together with the bottom, use a fork along the edges to create the crimped border.

Can I Prep These in Advance?
Yes! You can cut out the pie dough, prep the filling, and assemble the ghosts up to a day ahead of time. (Just store in the refrigerator.) If you top the dough with an egg wash, I recommend waiting until right before you bake so they don’t get soggy.
Storing Leftover Ghost Apple Pie Bites
If you have any leftovers, store them in the refrigerator in a Tupperware container or Ziploc Bag, where they should stay fresh for several days. Reheat in the microwave on 15-second intervals until preferred temperature is reached.
