How to Make One-Pot Lasagna Soup
This super simple lasagna soup is the ultimate comfort food to curl up with on a chilly day!
What I especially love about this recipe is that it can easily feed a large group, or you can have leftovers for several days! It’s such an easy, quick, delicious recipe that is sure to be a crowd favorite!
Ingredients
- 1 tablespoon oil
- 1 large yellow onion, diced
- 1 tablespoon chopped garlic
- 2 pounds lean ground beef
- 1 tablespoon heaping Italian seasoning
- 2 teaspoons pepper
- 2 teaspoons salt
- 1 jar (24 ounces) pasta sauce
- 4 cups beef broth (can add up to 4 more cups if you want a runnier soup)
- 1 can (28 ounces) crushed tomatoes
- 12 ounces Mafalda noodles, or lasagna noodles broken
- ½ cup heavy cream
- 1 cup mozzarella cheese, shredded
- 1 cup jack cheese blend, shredded
Directions
1.Heat dutch oven over medium-high heat. Add in oil and then chopped onion. Cook for 3-4 minutes or until partly translucent. Add in garlic and cook for 1 minute.
2. Add in ground beef and sprinkle with Italian seasoning, salt, and pepper. Cook until browned, stirring occasionally. (Drain if necessary.)
4. Pour in pasta sauce, 4 cups beef broth, crushed tomatoes, and stir to combine.
5. Add in Mafalda noodles and allow soup to simmer for 8 minutes, or until noodles are al dente.
6. Add in heavy cream and cheeses, stir until combined.
Serve immediately and enjoy!! Tip: Never drain hot grease directly into your sink, as it can cause costly plumbing issues. Drain into a plastic container with a lid (such as a rinsed cream cheese container) and throw away.

Who says lasagna soup can’t be cute? You can serve right out of the pot and dress it up with fun bowls for entertaining.
You could definitely use one large pot for this recipe, but I’d recommend having a Dutch oven on-hand if you don’t have one already. Dutch ovens are beneficial because they are made of cast-iron (pots are usually made of metal) and heat the food evenly, while also retaining heat and moisture. They are ideal for one-pot recipes, rice, baking, and more! Here are some of my favorites:
Dutch Ovens: I used a white 5-quart Dutch oven from World Market, which also has a 7-quart option. Walmart also has cute Dutch ovens in black or red, and Amazon has an adorable pink one! For higher-end options, you could go with Le Creuset or Nordstrom.
Bowls: There are so many beautiful options! I love this black-and-white coordinating set or this colorful terracotta Spanish style. Walmart has these dreamy gray stoneware bowls with silver rims for a great price, or Target has these fun red-and-white striped bowls.
Pumpkin Bowls: I first made this in the fall and used this Set of 4 White Pumpkin Bowls. You could also serve in these Pumpkin Bowls with Gold Stem or this Set of 2 Orange Pumpkin Bowls.
Can I Make This Ahead of Time?
This recipe is best served hot, so I’d recommend waiting to prepare until close to when you’d like to serve. You can definitely cook and drain the meat ahead of time to save a few minutes!
How Should I Store Leftovers?
Store any leftovers in a Tupperware container and refrigerate. Reheat in the microwave before serving again.
