This Easy White Chicken Lasagna Soup Is Amazing

It’s uncharacteristically freezing in Texas right now and this white chicken lasagna soup was the ultimate comfort food to warm me up! This is one of those recipes that sound fancy and complicated but is actually super simple.

I love soup season and it’s been so fun trying out lot of different soups this year, which you can check out here! I have enjoyed them all so far but I have to say this one might be my favorite!

You can break these up into smaller pieces for the soup!

Ingredients

Here’s what you’ll need:

▢ 2 tablespoons unsalted butter
▢ 1 medium onion (finely chopped)
▢ 3 cloves fresh garlic (finely minced)
▢ 2 teaspoons Italian seasoning
▢ 1 teaspoon salt (reduce if not using low sodium broth)
▢ ¼ teaspoon black pepper
▢ ⅛ teaspoon crushed red pepper flakes (more for extra spice)
▢ 8 cups low sodium chicken broth
▢ 3 boneless skinless chicken breasts
▢ ¼ cup sundried tomatoes (chopped – optional)
▢ 2 cups broken lasagna noodles
▢ 1.5 cup half and half or cream (the higher the fat content, the richer the soup)
▢ 3 tablespoons corn starch
▢ 1 cup fresh spinach (roughly chopped)
▢ 1 cup shredded mozzarella cheese more for garnish as desired

Directions

  1. In a large dutch oven or soup pot, melt the butter over medium heat. Add the onions and cook until just starting to brown.
  2. Stir in garlic, Italian seasoning, salt, pepper, and red pepper flakes. Cook 1 minute.
  3. Add chicken broth and stir well. Then add chicken breasts (uncooked) and sun-dried tomatoes.
  4. Bring to a simmer and cover, reduce heat to medium-low and cook for 12-15 minutes, stirring occasionally, until chicken breasts are cooked through (internal temperature of at least 165 degrees F).
  5. When the chicken is cooked, remove from the soup and shred. Add in the lasagna noodles and cook until al dente or soft.
  6. Whisk together cream and corn starch in a small bowl.
  7. Stir the shredded chicken, cream and spinach back into the pot and heat through.
  8. Stir in mozzarella cheese until melted and creamy! Serve with extra cheese on top if desired!

Here are my favorite products for both prep work and serving!

Dutch Ovens: Dutch ovens are very handy for making soup because they cook the contents evenly. I used a white 5-quart Dutch oven from World Market, which also has a 7-quart option. (There is also a very similar 7-quart option from Home Goods!) Walmart also has cute Dutch ovens in black or red, and Amazon has an adorable pink one! For higher-end options, you could go with Le Creuset or Nordstrom.

Pots and Pans: If you’re looking for a high-quality set of pots and pans, this black and gold set from Walmart is beautiful!

Chopping Board: I used my go-to MacKenzie Childs Check-Chop Board. Some other fun options are this marble and wood option from World Market, this white striped wooden board from Kirklands, this mango wood board from Target, and this marble and wood rectangular tray from JC Penney.

Bowls: There is something for everyone, no matter your personal style! I used MacKenzie Childs bowls, which you can have in a larger option, smaller option, or an ice-cream bowl option that also works for soup!

For a more budget-friendly option, I also love this black-and-white coordinating set or this colorful terracotta Spanish style. Walmart has these dreamy gray stoneware bowls with silver rims for a great price, or Target has these fun red-and-white striped bowls.

Can I Make This Ahead of Time?

Yes! You can make this white chicken lasagna soup up to 2-3 days in advance, just reheat when you are ready to serve. I’d recommend adding the spinach until the last minute, so it stays fresh and doesn’t wilt.

Storing Leftover White Chicken Lasagna Soup

Store any leftovers in a Tupperware container in the refrigerator. This should last for several days.
