Ingredients

For The Smashed Potatoes:

  • 1.5 lbs (700g) baby potatoes
  • 2-3 tbsp olive oil
  • Salt and pepper to taste
  • Optional: rosemary or thyme

For The Garlic Cheddar Sour Cream Dip:

  • 1 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1-2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: chopped chives or parsley for garnish

Directions

  1. Prepare Potatoes: Preheat oven to 425°F (220°C). Boil baby potatoes until fork-tender (15-20 mins).
  2. Smash Potatoes: Drain and cool slightly. Flatten each on a baking sheet. Brush with olive oil, season with salt, pepper, and herbs.
  3. Bake Potatoes: Bake for 20-25 minutes until crispy.
  4. Make Dip: Mix sour cream, cheddar, garlic, salt, and pepper.
  5. Serve: Arrange potatoes on a platter. Serve warm with dip. Garnish with chives or parsley. Enjoy!

Can I Prep These Smashed Potatoes in Advance?

Yes! You can boil and smash the potatoes in advance and keep refrigerated, where they should stay fresh for 1-2 days. We recommend waiting until baking them until you’re ready to serve, so they’re warm and crispy.

Storing Leftovers

Store any leftovers in a Ziploc Bag or Tupperware container and refrigerate, where they should stay fresh for several days. To reheat, microwave for 30-second intervals until preferred heat is reached.
