This baked blueberry Oatmeal is filled with blueberries and sweetened naturally with bananas and maple syrup. Perfect to enjoy for breakfast or with a scoop of vanilla ice cream for dessert.

This Baked Blueberry Oatmeal is such an easy and healthy recipe that everyone will enjoy! It is also a great way to get rid of those over ripe bananas!

This recipe reminds me of a healthier version of blueberry crisp which is one of my favorite things to bake in the summer. It is also vegan friendly and gluten free!

I adapted this recipe from one of my favorite places to go for healthy recipes – Eating Bird Food. She has a ton of other baked Oatmeal recipes that I can’t wait to try out!

Substitutions for this Baked Blueberry Oatmeal Recipe

Oil – You can sub coconut oil with olive oil or avocado oil

Spices – You can omit the nutmeg, or cinnamon from this recipe if you prefer. It will not be as flavorful. 

Berries – This recipe will work with other berries like cherries, raspberries, strawberries, or even a frozen berry mix!

Fresh Berries- You can make this recipe with fresh berries instead of frozen berries. It may take a few less minutes to cook!

Fruit – You can use pretty much any fruit in this recipe.

Maple Syrup – You can sub maple syrup with honey

Unsweetened Vanilla Almond Milk – You can make this using any other milk.

How to make Baked Blueberry Oatmeal

INGREDIENTS

  • 2 cups rolled old-fashioned oats
  • 1/4 cup pure maple syrup
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups unsweetened vanilla almond milk
  • 1 large egg
  • 2 tablespoons coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • 2 ripe bananas, mashed
  • 2 cups fresh or frozen blueberries, divided
  • cooking spray
  • 1/2 cup chopped pecans (optional)

Directions

  1. Preheat the oven to 375°F.
  2. Spray an 8-inch square baking dish with cooking spray.
  3. In a large bowl, mix together the oats, baking powder, cinnamon, nutmeg, and salt.
  4. Add in the milk, maple syrup, egg, coconut oil, vanilla and bananas. Stir well to combine.
  5. Fold in 1 cup of blueberries.
  6. Pour oatmeal mixture into the prepared baking dish.
  7. Add the remaining blueberries across the top and top with pecans if desired.
  8. Bake for 40 to 55 minutes or until the middle of the bake is golden. Let cool for a few minutes and serve warm! Top with ice cream, if you must! No judgment here!
