You Will Love This This Fiesta Corn Dip!

This Fiesta Corn Dip is the life of the party — creamy, cheesy, and packed with flavor in every scoop! 🌽✨ Just dump and chill, and you’re ready to wow the crowd.

This is perfect for pool days, BBQs, or anytime you want to spice things up! 💃

Instructions

  • 3 cans Mexican-style corn, drained
  • 1 can (4 oz) green chilies, drained
  • ¼ cup chopped jalapeños (adjust to your spice level)
  • ½ cup chopped red bell pepper
  • ½ cup chopped green onions
  • 1 cup sour cream*
  • ½ cup mayo*
  • 1 cup shredded cheddar cheese
  • Salt & pepper to taste

*You can also use a lighter version for a healthier option.

Directions

  1. Dump all the ingredients into a large mixing bowl.
  2. Stir until everything is well combined.
  3. Chill in the fridge for at least 1 hour (if you can wait!)

Yes! You can prep this several hours ahead of time or even the day before (just store in the fridge.) Be sure to chill for at least 30 minutes and it’s so refreshing on a hot day!

Storing Leftovers

If you have any leftover Fiesta Corn Dip, cover with Saran Wrap or foil (or even better: transfer to a Tupperware Container) and refrigerate. This should stay fresh for several days, although we doubt it will last that long!
