Chocolate Chip Granola Greek Yogurt Berry Bark

I love easy recipes, can you tell? But, I also love recipes that are quick and HEALTHY! This Chocolate Chip Granola Greek Yogurt Berry Bark is a great snack to enjoy this summer if you are craving something sweet and refreshing!

This recipe only requires a few ingredients and is a snack that will keep you full longer because of the protein! Did you know that Greek Yogurt is full of protein? I love to use Greek Yogurt in all sorts of recipes…it is a great substitution for sour cream.

I love how easy this is to make and you can also customize it to what you prefer, or what you have on hand! Feel free to swap out the blueberries or strawberries for raspberries or leave out the chocolate chips and drizzle chocolate sauce on top instead. You can also add in nuts such as almonds or pistachio. The combinations are endless!

I know this easy snack will be a big with not only kids but adults too! You will definitely want to put this recipe in your regular snack rotation.

How to make Chocolate Granola Greek Yogurt Berry Bark

Ingredients

  • 3 cups plain Greek yogurt
  • 1 tsp vanilla
  • 1/3 cup honey
  • 1 cup sliced strawberries 
  • 1 cup blueberries 
  • 1/3 cup mini chocolate chips
  • 1/3 cup granola of your choice

Instructions

  1. Line baking sheet with parchment paper.
  2. In small mixing size bow bowl, combine yogurt, honey and vanilla. Mix until combined.
  3. Using a spoon or spatula, spread yogurt out in a thick layer on parchment paper. Make sure the yogurt is not too thin or it will crumble.
  4. Add the strawberries, blueberries, chocolate chips and granola over the yogurt.
  5. Place baking sheet in freezer for at least 3 hours, but overnight will give you the best results.
  6. Once bark has set, peel away from parchment paper and break into pieces.

Note: Keep remaining bark in an airtight container in the freezer for up to one month.
