How to Make an Irresistible Fritos Corn Salad!

Spice up your summer BBQ with this irresistible Fritos Corn Salad! 🌽🥗 Easy to make, crunchy, and bursting with flavor – it’s the ultimate crowd-pleaser!

Ingredients

  • 2 (15 ounce) cans whole kernel corn, drained
  • 1 red bell pepper, finely diced
  • 2 cups shredded Mexican blend cheese
  • 1 cup mayo (can substitute light mayo)
  • ¼ teaspoon black pepper
  • 1 (9.25 ounce) bag Chili Cheese Fritos, lightly crushed
  • Fresh cilantro, for garnish

Directions

  1. In a large mixing bowl, stir together corn, diced bell pepper, shredded cheese, mayo, and black pepper.
  2. Right before serving, stir in crushed Chili Cheese Fritos.
  3. Garnish with fresh cilantro if desired.

Perfect Presentation Platters

This Fritos Corn Salad can be served in a bowl or casserole dish! Here are some of my favorites:

Casserole Dish: I used this MacKenzie Childs Casserole Dish, which is a bit of a splurge but also doubles as beautiful decor in my kitchen. Target also has a high-quality enamel version in either small or large!

Large Serving Bowls: If you’d prefer to serve this in a bowl, I love this Wooden Serving Bowl from JC Penney (that’s on sale!) or you may also love this beautiful stoneware bowl. Target also has a beautiful plaid serving bowl that’s perfect for summers and outdoors! For a higher-end choice, I love this white floral bowl by MacKenzie-Childs, as well this everyday bowl from her collection, which also comes in blue and now pink!

Individual Bowls: If you’d prefer to serve this in individual or smaller bowls, Walmart has these beautiful gray stoneware bowls with silver rims that are so elegant! I also love this black-and-white coordinating set.

Individual Plates: I love the black-and-white checkered plates from MacKenzie-Childs, which also come in a blue or pink version! For adorable salad plates, I am obsessed with this beautiful coordinating set from Target for a great price!

Kitchen Links: I get asked all the time about the products in the background of my kitchen. Much of it is from MacKenzie-Childs, which I have slowly grown a collection of over the years! My favorites are this checkered chopping board, my black and white checkered teapot, and the gray and white checkered utensil holder. I also have this enamel canister that you can find in smallmedium, or large.

Can I Prep This in Advance?

Yes! You can wash and cut the veggies in advance, or even make the whole dip. (Cover tightly and keep in the fridge, where it should stay fresh for about one day.) Just hold off on adding the Fritos until right before serving time so they don’t get soggy.

Storing Leftover Fritos Corn Salad

You can cover the bowl with Saran Wrap and refrigerate, or store in a Tupperware container or Ziploc Bag. These should stay fresh for 2-3 days and is also amazing on a sandwich wrap!
